Spicy Radish Pickle (Mula Ko Achar) with Gluten-Free Accompaniments

Ingredients

  • 1 lb Radish
  • 2 tbsp Sesame Seeds
  • 2 tbsp Lemon Juice
  • 2 small Green Chilies
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 0.25 tsp Turmeric Powder
  • 0.5 tsp Salt
  • 1 tbsp Mustard Oil

Instructions

  1. 1Peel and grate the 1 lb Radish. Place the grated radish in a medium bowl.
  2. 2Place the 2 tbsp Sesame Seeds in a dry skillet over medium heat (350°F / 175°C). Toast for 2-4 minutes, shaking the pan often, until the seeds are fragrant and lightly golden. Remove from heat immediately to prevent burning.
  3. 3Add the toasted sesame seeds, 2 tbsp Lemon Juice, 2 small Green Chilies (finely chopped), 1 tbsp Ginger (minced), 2 cloves Garlic (minced), 0.25 tsp Turmeric Powder, and 0.5 tsp Salt to the bowl with the grated radish.
  4. 4Place a small saucepan over medium-high heat (400°F / 200°C). Add the 1 tbsp Mustard Oil. Heat the oil until it just begins to smoke slightly, about 1-2 minutes.
  5. 5Carefully pour the hot mustard oil over the radish mixture in the bowl. Be cautious as the oil is hot.
  6. 6Mix all the ingredients in the bowl thoroughly with a spoon until everything is well combined. Cover the bowl and let the pickle sit at room temperature for at least 30 minutes before serving to allow the flavors to meld.
