Ingredients

  • 2 large Green Plantains
  • 2 tbsp Coconut Oil
  • 1 tsp Chili Powder
  • 0.5 tsp Cumin
  • 0.5 tsp Salt
  • 2 medium Avocado
  • 2 tbsp Lime Juice
  • 0.25 medium Red Onion
  • 2 tbsp Cilantro

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel and thinly slice the plantains into chips.
  3. 3Toss plantain slices with coconut oil, chili powder, cumin, and salt.
  4. 4Arrange plantains in a single layer on a baking sheet.
  5. 5Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  6. 6While plantains are baking, prepare the avocado dip.
  7. 7Mash avocados in a bowl. Add lime juice, diced red onion, and chopped cilantro.
