Spicy Plantain Chips (KeKe)

Ingredients

  • 3 large Green Plantains
  • 2 cups Palm Oil (or Coconut Oil)
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper
  • 1/2 teaspoon Sea Salt

Instructions

  1. 1Peel the green plantains and slice them very thinly using a mandoline or sharp knife.
  2. 2Heat the palm oil (or coconut oil) in a large, deep skillet or pot over medium-high heat.
  3. 3Carefully add the plantain slices to the hot oil in batches, ensuring not to overcrowd the skillet.
  4. 4Fry the plantain slices for 2-3 minutes per side, or until golden brown and crispy.
  5. 5Remove the fried plantain chips from the oil using a slotted spoon and transfer them to a paper towel-lined plate to drain excess oil.
  6. 6In a small bowl, combine the ground ginger, garlic powder, cayenne pepper, and sea salt.
  7. 7Sprinkle the spice mixture over the plantain chips while they are still warm.
  8. 8Allow the chips to cool completely before serving.
