  • 0.5 cup Red Onion
  • 0.5 cup Red Bell Pepper
  • 1 small Jalapeno, seeded and minced
  • 2 tablespoons Lime Juice
  • 0.25 cup Cilantro, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 large Green Plantains
  • 2 cups Vegetable Oil
  • 1 teaspoon Salt

Instructions

  1. 1Prepare the Salsa: In a medium bowl, combine the diced mango, black beans, red onion, red bell pepper, jalapeno, lime juice, cilantro, salt, and pepper. Mix well and set aside to allow flavors to meld.
