Ingredients

  • 2 medium Ripe Mango
  • 1 cup Black Beans
  • 0.5 medium Red Onion
  • 0.5 medium Red Bell Pepper
  • 1 small Jalapeño
  • 2 tablespoons Lime Juice
  • 0.25 cup Cilantro
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper
  • 2 large Green Plantains
  • 2 tablespoons Coconut Oil

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Peel and thinly slice the green plantains into rounds.
  3. 3Toss the plantain slices with melted coconut oil, salt, and pepper.
