Spicy Harissa Shrimp with Cauliflower Rice

Ingredients

  • 1 lb Shrimp
  • 2 tablespoons Harissa paste
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.125 teaspoon Black pepper
  • 4 cups Cauliflower rice
  • 0.25 cup Fresh cilantro

Instructions

  1. 1In a medium bowl, combine the 1 lb shrimp, 2 tablespoons harissa paste, 2 tablespoons olive oil, 2 cloves minced garlic, 1 tablespoon lemon juice, 0.25 teaspoon salt, and 0.125 teaspoon black pepper. Stir everything together until the shrimp is evenly coated. Let the shrimp marinate for at least 10 minutes.
  2. 2Place a 10-inch skillet over medium-high heat, which is about 375°F (190°C).
  3. 3Add the marinated shrimp to the hot skillet in a single layer. Cook for 2 to 3 minutes per side, until the shrimp turns pink and opaque and reaches an internal temperature of 145°F (63°C).
  4. 4While the shrimp is cooking, prepare the 4 cups cauliflower rice. Heat the cauliflower rice in a separate pan over medium heat, approximately 300°F (150°C), and stir for 5 to 7 minutes, or until it is tender.
  5. 5Divide the cooked cauliflower rice among four serving bowls.
  6. 6Top the cauliflower rice with the cooked harissa shrimp.
  7. 7Garnish the dish with the 0.25 cup fresh cilantro.
