Ingredients

  • 1 lb Shrimp
  • 1 large Cauliflower
  • 2 tablespoons Olive Oil
  • 1 tablespoon Harissa Paste
  • 2 cloves Garlic
  • 1 tablespoon Lemon Juice
  • 1/4 cup Fresh Cilantro
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Pulse cauliflower in a food processor until it resembles couscous. Alternatively, use a grater.
  2. 2Heat the olive oil in a large skillet over medium-high heat.
  3. 3Add the shrimp and cook until pink and opaque, about 3-5 minutes.
  4. 4Add the harissa paste and minced garlic and cook for 1 minute more.
  5. 5Add the cauliflower couscous and cook for 3-5 minutes, or until tender.
  6. 6Stir in the lemon juice, salt, and pepper.
  7. 7Garnish with fresh cilantro before serving.
