Ingredients

  • 1.5 lbs Chicken thighs, boneless, skinless, cut into 1-inch pieces
  • 6 cups Cabbage, shredded
  • 1 medium Onion, sliced
  • 4 cloves Garlic, minced
  • 1 tbsp Ginger, minced
  • 3 tbsp Gochujang (Korean chili paste)
  • 2 tbsp Coconut aminos
  • 1 tbsp Honey
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 2 Green onions, sliced
  • 1 tsp Sesame seeds
  • 2 tbsp Avocado oil (or other high-heat oil)

Instructions

  1. 1In a bowl, whisk together gochujang, coconut aminos, honey, rice vinegar, and sesame oil.
  2. 2Heat avocado oil in a large skillet or wok over medium-high heat.
  3. 3Add chicken and cook until browned and cooked through, about 5-7 minutes.
  4. 4Add onion, garlic, and ginger to the skillet and cook until fragrant, about 1 minute.
  5. 5Add shredded cabbage and stir-fry until slightly softened, about 3-5 minutes.
  6. 6Pour the gochujang sauce over the chicken and cabbage, and stir-fry until the sauce is thickened and evenly coats the ingredients, about 2-3 minutes.
  7. 7Garnish with sliced green onions and sesame seeds. Serve hot with rice.
