Ingredients

  • 2 cups Black-Eyed Peas
  • 1/4 cup Palm Oil
  • 1 medium Red Onion
  • 1/2 small Scotch Bonnet Pepper
  • 1 tablespoon Ginger
  • 2 cloves Garlic
  • 1 28 oz can Canned Diced Tomatoes
  • 2 tablespoons Tomato Paste
  • 1 cup Vegetable Broth
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Dried Thyme
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 large Fried Plantains

Instructions

  1. 1Soak the black-eyed peas overnight, then drain.
  2. 2Heat palm oil in a large pot over medium heat.
  3. 3Add chopped red onion, Scotch bonnet pepper (finely minced), grated ginger, and minced garlic. Sauté until fragrant, about 5 minutes.
  4. 4Stir in canned diced tomatoes, tomato paste, vegetable broth, smoked paprika, dried thyme, salt, and black pepper.
  5. 5Add the drained black-eyed peas to the pot. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the peas are tender.
  6. 6Serve hot with fried plantains.
