Ingredients

  • 1 medium Sweet Potato
  • 1 can Canned Chickpeas
  • 1/4 cup Red Onion
  • 1/4 cup All-Purpose Flour
  • 1/4 cup Coriander
  • 1/4 tsp Chili Flakes
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Vegetable Oil

Instructions

  1. 1Peel and grate the 1 medium sweet potato into a large bowl. Add the 1 can of chickpeas (drained and rinsed) to the bowl and mash them with a fork. Add the 1/4 cup of red onion, 1/4 cup of all-purpose flour, 1/4 cup of coriander, 1/4 tsp of chili flakes, 1/4 tsp of salt, and 1/4 tsp of pepper.
  2. 2Mix all the ingredients in the bowl together with your hands or a spoon until they are evenly combined into a thick mixture.
  3. 3Heat the 2 tbsp of vegetable oil in a 12-inch skillet over medium heat, which is about 350°F (175°C). Wait until the oil shimmers slightly.
  4. 4Scoop about 2 tablespoons of the mixture at a time and gently form it into small, flat patties, about 1/2-inch thick.
  5. 5Carefully place the patties into the hot oil in the skillet, making sure not to overcrowd the pan. Fry the fritters for 3 to 4 minutes on each side, until they are golden brown and appear cooked through.
  6. 6Remove the cooked fritters from the skillet and place them on a plate lined with paper towels to drain any excess oil. Serve the fritters warm.
