Ingredients

  • 1 lb Chicken thighs
  • 2 cups Corn (fresh or frozen)
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 1 medium Red bell pepper
  • 2 cloves Garlic
  • 1/2 cup Heavy cream
  • 1 tbsp Cajun seasoning
  • 1 tsp Hot sauce
  • 2 tbsp Butter

Instructions

  1. 1Cut the 1 lb of chicken thighs into bite-sized pieces, about 1-inch cubes.
  2. 2Melt the 2 tbsp of butter in a large skillet over medium heat (350°F / 175°C). Add the bite-sized chicken pieces and cook, stirring occasionally, until they are browned on all sides, about 5-7 minutes.
  3. 3Add the 1 medium onion (chopped), 1 medium green bell pepper (chopped), and 1 medium red bell pepper (chopped) to the skillet with the chicken. Cook, stirring often, until the vegetables are softened, about 5 minutes.
  4. 4Add the 2 cloves of garlic (minced) to the skillet and cook, stirring constantly, until fragrant, about 1 minute.
  5. 5Stir in the 2 cups of corn (fresh or frozen), 1 tbsp of Cajun seasoning, and 1 tsp of hot sauce. Cook, stirring, until everything is heated through, about 5 minutes.
  6. 6Pour in the 1/2 cup of heavy cream and stir to combine. Bring the mixture to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until the sauce has slightly thickened.
  7. 7Serve the Spicy Chicken Maque Choux hot.
