Ingredients

  • 1 cup Cooked Chicken (Diced)
  • 8 oz Andouille Sausage (Sliced)
  • 3 cups Cooked Rice
  • 1 medium Onion (Diced)
  • 1 medium Bell Pepper (Diced)
  • 1/2 cup Celery (Diced)
  • 3 cloves Garlic (Minced)
  • 1 14.5 oz can Diced Tomatoes (Canned, Undrained)
  • 1/2 cup Chicken Broth
  • 2 tbsp Cajun Seasoning
  • 1 tsp Hot Sauce
  • 2 tbsp Olive Oil
  • 2 tbsp Green Onions (Sliced, for garnish)

Instructions

  1. 1Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and celery. Cook until softened, about 5-7 minutes.
  2. 2Add garlic and cook for another minute until fragrant.
  3. 3Add andouille sausage and cook until lightly browned.
  4. 4Stir in diced tomatoes, chicken broth, Cajun seasoning, and hot sauce. Bring to a simmer.
  5. 5Add cooked chicken and cooked rice to the skillet. Stir well to combine.
  6. 6Reduce heat to low, cover, and simmer for 10-15 minutes, stirring occasionally, until heated through.
