Ingredients

  • 1 cup Cashews
  • 1 cup Cooked Chickpeas
  • 2 tbsp Coconut Oil
  • 1 tsp Chili Powder
  • 0.5 tsp Turmeric Powder
  • 0.5 tsp Cumin Powder
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 1 tbsp Lime Juice

Instructions

  1. 1Preheat your oven to 350°F (175°C).
  2. 2In a medium bowl, combine the 1 cup of cashews and the 1 cup of cooked chickpeas.
  3. 3Add the 2 tablespoons of coconut oil, 1 teaspoon of chili powder, 0.5 teaspoon of turmeric powder, 0.5 teaspoon of cumin powder, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper to the bowl. Toss everything together until the cashews and chickpeas are evenly coated with the oil and spices.
  4. 4Spread the coated cashew and chickpea mixture in a single layer onto a baking sheet.
  5. 5Place the baking sheet into the preheated oven at 350°F (175°C) and roast for 15 to 20 minutes. Halfway through the cooking time (after about 7-10 minutes), carefully stir the mixture on the baking sheet to ensure even roasting. The bites are done when they appear golden brown and feel crunchy when gently pressed.
  6. 6Carefully remove the baking sheet from the oven. Allow the bites to cool on the baking sheet for a few minutes until they are slightly cooled.
  7. 7Drizzle the 1 tablespoon of lime juice evenly over the slightly cooled bites just before serving.
