Spicy Cajun Deviled Eggs (Dairy-Free)

Ingredients

  • 6 Eggs
  • 1/2 Avocado
  • 2 tbsp Dairy-Free Mayonnaise
  • 1 tsp Cajun Seasoning
  • 1/2 tsp Hot Sauce
  • 1 tbsp Green Onion, chopped
  • 1/4 tsp Paprika, for garnish

Instructions

  1. 1Place the 6 eggs in a large heavy-bottomed pot and cover with cold water by 1 inch. Bring to a rolling boil over high heat, then reduce heat to medium and cook for 10 minutes. Transfer the eggs to an ice bath for 10 minutes to stop the cooking and make them easier to peel. Once cooled, peel the eggs and slice them in half lengthwise.
  2. 2Carefully remove the yolks from the 6 halved eggs and place them in a medium bowl. Arrange the 6 egg white halves on a serving platter.
  3. 3Add the 1/2 avocado, 2 tbsp dairy-free mayonnaise, 1 tsp Cajun seasoning, and 1/2 tsp hot sauce to the bowl with the egg yolks.
  4. 4Mash the ingredients in the bowl with a fork until they are smooth and creamy. Ensure there are no large lumps of avocado.
  5. 5Spoon the yolk mixture evenly into the 6 egg white halves on the serving platter. You can also use a piping bag for a neater presentation.
  6. 6Sprinkle the chopped 1 tbsp green onion and 1/4 tsp paprika over the filled egg halves for garnish.
  7. 7Chill the deviled eggs in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
