Spicy Black Bean Burgers with Sweet Potato Fries

Ingredients

  • 2 15-oz cans Canned black beans, rinsed and drained
  • 0.75 cup Gluten-free rolled oats
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 medium Sweet potatoes, cut into fries
  • 2 tbsp Avocado oil
  • 4 each Gluten-free, dairy-free burger buns
  • 4 large Lettuce leaves
  • 4 each Tomato slices
  • 4 each Red onion slices

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Line a baking sheet with parchment paper for the fries.
  3. 3In a large bowl, mash the black beans with a fork or potato masher until mostly broken down but some texture remains.
  4. 4Add the gluten-free rolled oats, finely chopped onion, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper to the mashed beans. Mix well to combine.
  5. 5Form the mixture into 4 equal-sized patties.
  6. 6In a separate bowl, toss the sweet potato fries with avocado oil, salt, and pepper.
  7. 7Spread the sweet potato fries in a single layer on the prepared baking sheet.
  8. 8Bake the fries for 20 minutes.
  9. 9While the fries are baking, heat a large skillet over medium heat with a tablespoon of oil (optional, for crispier burgers). Cook the black bean patties for 5-7 minutes per side, until heated through and slightly browned.
  10. 10Toast the burger buns if desired.
  11. 11Assemble the burgers with lettuce, tomato, and red onion slices on the allergen-free buns.
  12. 12Serve the black bean burgers with the baked sweet potato fries.
