Spicy Black Bean Burgers with Sweet Potato Fries

Ingredients

  • 2 cans (15 oz each) Black beans, rinsed and drained
  • 0.75 cup Gluten-free breadcrumbs
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil
  • 2 large Sweet potatoes, cut into fries
  • 2 tbsp Avocado oil
  • 4 each Gluten-free burger buns
  • to taste Optional toppings: lettuce, tomato, onion, avocado

Instructions

  1. 1Preheat your oven to 425°F (220°C). On a large baking sheet, combine the 2 large sweet potatoes, cut into fries, with 2 tbsp avocado oil, 0.75 tsp salt, and 0.25 tsp black pepper. Spread the sweet potato fries in a single layer across the baking sheet.
  2. 2Bake the sweet potato fries in the preheated oven for 25-30 minutes, flipping them over halfway through the baking time. The fries are done when they are tender and slightly crispy.
  3. 3While the sweet potato fries are baking, prepare the burger mixture. In a large bowl, mash the 2 cans (15 oz each) black beans, which have been rinsed and drained, using a fork or potato masher until they are mostly mashed but still have some texture.
  4. 4Add the 0.5 cup finely chopped onion, 2 cloves minced garlic, 1.5 tsp chili powder, 1 tsp cumin, 0.5 tsp smoked paprika, 0.75 tsp salt, and 0.25 tsp black pepper to the mashed black beans. Mix all ingredients together thoroughly.
  5. 5Stir in the 0.75 cup gluten-free breadcrumbs until the mixture holds together when you squeeze it. If the mixture feels too wet, add more gluten-free breadcrumbs, 1 tablespoon at a time, until it reaches the desired consistency. If the mixture feels too dry, add 1 tablespoon of water.
  6. 6Divide the black bean mixture into 4 equal portions and form each portion into a patty.
  7. 7To cook the patties, choose one of the following methods: For the Skillet Method, heat 1 tbsp olive oil in a large skillet over medium heat, then carefully place the 4 patties into the hot skillet and cook for 5-7 minutes on each side, until they are heated through and nicely browned. For the Oven Method, preheat your oven to 400°F (200°C), arrange the 4 patties on a separate baking sheet lined with parchment paper, and bake for 20-25 minutes, flipping them halfway through, until they are heated through and firm.
  8. 8Serve the cooked black bean burgers immediately on the 4 gluten-free burger buns with the sweet potato fries. Add optional toppings such as lettuce, tomato, onion, and avocado, to taste.
