Spicy Black Bean Burgers with Sweet Potato Fries

Ingredients

  • 2 cans (15 oz each) Black beans, rinsed and drained
  • 0.75 cup Gluten-free oats
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil
  • 2 large Sweet potatoes, cut into fries
  • 2 tbsp Vegetable oil
  • 4 each Gluten-free buns
  • to taste Lettuce, tomato, onion (for topping)

Instructions

  1. 1Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. 2In a large bowl, mash the 2 cans (15 oz each) of rinsed and drained black beans with a fork or potato masher until most of the beans are broken down, but still leave some texture and small chunks.
  3. 3Add the 0.75 cup of gluten-free oats, 0.5 cup of finely chopped onion, 2 cloves of minced garlic, 1.5 tsp of chili powder, 1 tsp of cumin, 0.5 tsp of smoked paprika, 0.5 tsp of salt, and 0.25 tsp of black pepper to the mashed beans. Stir in the 1 tbsp of olive oil. Mix all ingredients well until they are thoroughly combined and the mixture holds together when pressed.
  4. 4Divide the mixture into 4 equal portions and form each portion into a patty. Place the 4 patties onto one of the prepared baking sheets.
  5. 5In a separate bowl, toss the 2 large sweet potatoes (cut into fries) with the 2 tbsp of vegetable oil. Spread the sweet potato fries in a single layer on the second prepared baking sheet.
  6. 6Place both baking sheets into the preheated oven. Bake for 30-40 minutes at 400°F (200°C). Halfway through the baking time (after 15-20 minutes), carefully flip both the 4 black bean patties and the sweet potato fries using a spatula. Continue baking until the patties are firm and slightly browned, and the fries are tender and slightly crispy.
  7. 7Serve the 4 black bean burgers immediately on the 4 gluten-free buns, topped with your desired amounts of lettuce, tomato, and onion. Serve alongside the sweet potato fries.
