Spicy Black Bean Burgers with Sweet Potato Fries

Ingredients

  • 2 cans (15 oz each) Black beans, rinsed and drained
  • 0.75 cup Gluten-free breadcrumbs
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.25 tsp Cayenne pepper (optional)
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper
  • 2 large Sweet potatoes, cut into fries
  • 2 tbsp Avocado oil
  • 4 each Gluten-free burger buns
  • to taste Lettuce, tomato, onion for topping

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, mash the 2 cans (15 oz each) of black beans with a fork or potato masher until they are mostly broken down but still have a little texture.
  3. 3Add the 0.75 cup of gluten-free breadcrumbs, 0.5 cup of finely chopped onion, 2 cloves of minced garlic, 1.5 tsp of chili powder, 1 tsp of cumin, 0.5 tsp of smoked paprika, 0.25 tsp of cayenne pepper (if using), 0.75 tsp of salt, and 0.25 tsp of black pepper to the mashed beans. Mix everything together thoroughly until it is well combined.
  4. 4Divide the mixture into 4 equal portions and shape each portion into a burger patty.
  5. 5In a separate bowl, toss the 2 large sweet potatoes, cut into fries, with 2 tbsp of avocado oil, a pinch of salt, and a pinch of black pepper.
  6. 6Line a baking sheet with parchment paper. Spread the seasoned sweet potato fries in a single layer on one half of the baking sheet. Place the 4 black bean patties on the other half of the baking sheet.
  7. 7Bake for 20 to 25 minutes. Halfway through the baking time (after about 10-12 minutes), carefully flip both the patties and the fries. The fries are done when they are tender and slightly crispy, and the burgers are done when they are heated through and feel firm to the touch.
  8. 8Serve the black bean burgers on the 4 gluten-free burger buns with your desired toppings (lettuce, tomato, onion) and a side of the sweet potato fries.
