Spicy Black Bean Burgers with Sweet Potato Fries

Ingredients

  • 2 cans (15 oz each) Canned black beans, rinsed and drained
  • 0.75 cup Gluten-free rolled oats
  • 0.5 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 tsp Chili powder
  • 1 tsp Cumin
  • 0.5 tsp Smoked paprika
  • 0.75 tsp Salt
  • 0.25 tsp Black pepper
  • 2 large Sweet potatoes, cut into 1/2-inch thick fries
  • 3 tbsp Olive oil
  • Optional: Gluten-free buns and toppings (lettuce, tomato, avocado)

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2In a large bowl, mash the 2 cans (15 oz each) black beans with a fork or potato masher until they are mostly broken down but still have a little texture. Add the 0.75 cup gluten-free rolled oats, 0.5 cup finely chopped onion, 2 cloves minced garlic, 1.5 tsp chili powder, 1 tsp cumin, 0.5 tsp smoked paprika, 0.75 tsp salt, and 0.25 tsp black pepper to the bowl with the mashed beans. Mix everything together very well until it's all combined.
  3. 3Divide the black bean mixture into 4 equal portions. Shape each portion into a burger patty.
  4. 4In a separate bowl, toss the 2 large sweet potatoes, cut into 1/2-inch thick fries, with 2 tbsp olive oil, a pinch of salt, and a pinch of black pepper. Make sure the fries are evenly coated.
  5. 5Line a baking sheet with parchment paper. Arrange the seasoned sweet potato fries in a single layer on one half of the baking sheet. Place the 4 black bean patties on the other half of the baking sheet.
  6. 6Bake for 20-25 minutes. Halfway through the baking time (after about 10-12 minutes), carefully flip both the sweet potato fries and the black bean patties. Continue baking until the fries are tender and crispy, and the burgers are heated through and feel firm to the touch.
  7. 7Serve the black bean burgers on gluten-free buns with your favorite toppings, alongside the crispy sweet potato fries.
