Ingredients

  • 2 cans Black Beans, canned, rinsed and drained
  • 1 cup Cooked Brown Rice
  • 0.5 cup Red Onion, chopped
  • 0.5 cup Corn Kernels, canned or frozen
  • 2 each Chipotle Peppers in Adobo Sauce, minced
  • 0.5 cup Breadcrumbs (gluten-free if needed)
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive Oil

Instructions

  1. 1In a large bowl, mash the black beans with a fork or potato masher, leaving some whole beans for texture.
  2. 2Add the cooked brown rice, red onion, corn kernels, chipotle peppers, breadcrumbs, cumin, chili powder, garlic powder, and salt to the bowl.
  3. 3Mix well until all ingredients are combined.
  4. 4Form the mixture into 4 patties.
  5. 5Heat the olive oil in a large skillet over medium heat.
  6. 6Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
