Spicy Black Bean and Sweet Potato Empanadas (Shellfish-Free)

Flaky empanadas filled with a spicy and flavorful mixture of black beans and sweet potato. A great vegetarian snack that's free from shellfish.

Ingredients

  • 1 medium Sweet Potato
  • 1 can Black Beans
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 small Chipotle Pepper in Adobo Sauce
  • 1 tsp Cumin
  • 12 disks Empanada Dough
  • 2 tbsp Olive Oil

Instructions

  1. 1Preheat your oven to 375°F (190°C). Peel the 1 medium sweet potato and cut it into 1/2-inch cubes. Spread the 1 medium sweet potato cubes in a single layer on a clean baking sheet.
  2. 2Place the baking sheet with the 1 medium sweet potato cubes into the preheated 375°F (190°C) oven. Roast for 20 minutes, or until the sweet potato cubes are tender when pierced with a fork.
  3. 3While the sweet potato roasts, finely chop the 1/2 medium onion and mince the 2 cloves garlic. Heat the 2 tablespoons of olive oil in a 10-inch skillet over medium heat. Add the chopped 1/2 medium onion to the skillet and cook for 5 minutes, stirring occasionally, until it softens.
  4. 4Add the minced 2 cloves garlic to the skillet with the onion and cook for 1 more minute, stirring constantly, until fragrant, being careful not to burn it. Drain and rinse the 1 can of black beans. Finely mince the 1 small chipotle pepper in adobo sauce.
  5. 5Add the drained and rinsed 1 can of black beans, the roasted 1 medium sweet potato cubes, the minced 1 small chipotle pepper in adobo sauce, and the 1 teaspoon of cumin to the 10-inch skillet. Stir all ingredients together and cook over medium heat for 10 minutes, mashing some of the beans and sweet potato with the back of your spoon to create a thicker filling.
  6. 6Lay out the 12 disks of empanada dough on a clean surface. Spoon about 2 tablespoons of the filling onto one half of each empanada disk, leaving a small border around the edge. Fold the other half of the dough over the filling to create a half-moon shape, then press the edges together firmly and crimp with a fork to seal each empanada.
  7. 7Place the sealed 12 empanadas on a clean baking sheet. Bake in the preheated 375°F (190°C) oven for 20-25 minutes, or until the empanada dough is golden brown and crisp.
