Spiced Sweet Potato Fries with Avocado Dip

Ingredients

  • 2 large Sweet potatoes
  • 2 tbsp Olive oil
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 large Avocado
  • 1 tbsp Lime juice
  • 2 tbsp Water
  • 2 tbsp Cilantro

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Peel the 2 large sweet potatoes. Carefully cut them lengthwise into 1/4-inch thick slices, then cut these slices into 1/4-inch wide sticks to form fries.
  3. 3In a large bowl, combine the prepared sweet potato fries with the 2 tbsp of olive oil, 1 tsp of paprika, 1/2 tsp of cumin, 1/2 tsp of coriander, 1/2 tsp of salt, and 1/4 tsp of black pepper. Toss the fries until they are evenly coated with the oil and spices.
  4. 4Spread the seasoned sweet potato fries in a single layer on a large baking sheet, ensuring that no fries are overlapping.
  5. 5Place the baking sheet into the preheated oven at 400°F (200°C). Bake for 20 to 25 minutes, using tongs or a spatula to flip the fries halfway through the baking time, until they are golden brown and crispy to the touch.
  6. 6While the sweet potato fries are baking, prepare the avocado dip. In a medium bowl, mash the 1 large avocado with a fork until it is mostly smooth. Stir in the 1 tbsp of lime juice, 2 tbsp of water, and 2 tbsp of cilantro until all ingredients are well combined.
  7. 7Serve the warm sweet potato fries immediately with the avocado dip on the side.
