Spiced Pecan Pralines

Ingredients

  • 2 cups Pecans
  • 1 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 1/4 cup Soy-Free Butter Alternative
  • 1/4 cup Full-Fat Coconut Milk
  • 1 tsp Vanilla Extract
  • 1/4 tsp Cinnamon
  • 1/4 tsp Salt

Instructions

  1. 1Line a baking sheet with parchment paper.
  2. 2In a heavy-bottomed saucepan, combine granulated sugar, brown sugar, soy-free butter alternative, and coconut milk.
  3. 3Cook over medium heat, stirring constantly, until sugar is dissolved.
  4. 4Continue cooking, without stirring, until the mixture reaches the soft-ball stage (235-240°F or 112-115°C).
  5. 5Remove from heat and stir in vanilla extract, cinnamon, and salt.
  6. 6Add pecans and stir until the mixture thickens slightly and pecans are coated.
  7. 7Drop spoonfuls of the mixture onto the prepared baking sheet.
  8. 8Let cool completely until set.
