Spiced Paleo Turkish Chickpea and Vegetable Stew

Ingredients

  • 2 tbsp Olive Oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 medium Carrots
  • 2 stalks Celery
  • 1 can Chickpeas
  • 1 large Sweet Potato
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • 0.5 tsp Coriander
  • 0.5 tsp Smoked Paprika
  • 1 tsp Salt
  • 0.5 tsp Pepper
  • 5 oz Spinach

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add chopped onion, minced garlic, carrots, and celery. Cook until softened.
  2. 2Stir in the diced tomatoes, vegetable broth, turmeric, cumin, coriander, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. 3If using chickpeas, rinse and drain them. If using diced sweet potato, dice into small cubes.
  4. 4Add the chickpeas (or diced sweet potato) to the stew and simmer for another 10 minutes.
  5. 5Stir in the spinach and cook until wilted.
  6. 6Serve warm.
