Spiced Lentil Soup (Mercimek Çorbası)

Ingredients

  • 1 cup Red Lentils
  • 6 cups Water
  • 1 medium Onion
  • 1 medium Carrot
  • 1 medium Potato
  • 2 tablespoons Olive Oil
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Dried Mint
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Red Pepper Flakes
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Lemon Juice

Instructions

  1. 1Rinse the red lentils thoroughly.
  2. 2In a large pot, heat olive oil over medium heat. Add onion, carrot, and potato and cook until softened, about 5 minutes.
  3. 3Stir in tomato paste, dried mint, cumin, and red pepper flakes. Cook for another minute until fragrant.
  4. 4Add the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 30 minutes, or until lentils are tender.
  5. 5Use an immersion blender to blend the soup until smooth. Season with salt and pepper.
  6. 6Serve hot, garnished with a squeeze of fresh lemon juice.
