Ingredients

  • 1 cup Red Lentils
  • 4 cups Water
  • 1/2 tsp Turmeric
  • 1/2 tsp Salt
  • 2 tbsp Coconut Oil
  • 1 tsp Cumin Seeds
  • 1/2 tsp Mustard Seeds
  • 1/4 tsp Asafoetida (hing)
  • 2 cloves Garlic
  • 1 tsp Ginger
  • 1 small Green Chili
  • 1 medium Tomato
  • 2 tbsp Cilantro
  • 1 tbsp Lemon Juice

Instructions

  1. 1Rinse red lentils and combine with water, turmeric, and salt in a pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are soft.
  2. 2While the lentils are cooking, prepare the tadka (tempering). Heat coconut oil in a small pan over medium heat.
  3. 3Add cumin seeds, mustard seeds, and asafoetida. Once the seeds start to splutter, add minced garlic, ginger, and chopped green chili. Sauté for a minute until fragrant.
  4. 4Add chopped tomato and cook until softened.
  5. 5Pour the tadka over the cooked lentils. Stir well and simmer for another 5 minutes.
  6. 6Garnish with fresh cilantro and lemon juice before serving.
