Ingredients

  • 1.5 lb Ground beef
  • 3 medium Zucchini
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tsp Ground cumin
  • 1 tsp Coriander
  • 1/2 tsp Paprika
  • 2 tbsp Olive oil
  • 1 28 oz can Crushed tomatoes
  • 1/4 cup Fresh parsley

Instructions

  1. 1In a bowl, combine ground beef, finely chopped onion, minced garlic, cumin, coriander, paprika, salt, and pepper.
  2. 2Mix well and form into small, oblong-shaped kofta.
  3. 3Heat olive oil in a large skillet over medium heat. Brown kofta on all sides.
  4. 4Add crushed tomatoes to the skillet. Bring to a simmer and cook for 15 minutes, or until kofta are cooked through.
  5. 5While kofta are cooking, spiralize zucchini into noodles.
  6. 6Sauté zucchini noodles in a separate skillet with a bit of olive oil until tender-crisp, about 3-5 minutes.
  7. 7Serve the kofta and tomato sauce over the zucchini noodles, garnished with fresh parsley.
