Ingredients

  • 1.5 pounds Potatoes
  • 1 medium Red onion
  • 2 cloves Garlic
  • 2 tablespoons Berbere spice blend
  • 1.5 cups Vegetable broth
  • 1 tablespoon Tomato paste
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt

Instructions

  1. 1Peel and dice potatoes into 1-inch cubes.
  2. 2In a pot, heat vegetable oil over medium heat. Sauté onion and garlic until softened.
  3. 3Add berbere spice blend and tomato paste. Cook for 1 minute, stirring constantly.
  4. 4Add diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
  5. 5Season with salt to taste. Serve hot.
