Ingredients

  • 1 can Chickpeas (canned)
  • 2 tablespoons Berbere Spice Blend
  • 1/2 medium Onion (diced)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1 tablespoon Lemon Juice

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Rinse and drain the 1 can of chickpeas thoroughly. Pat them dry with a paper towel.
  3. 3In a medium bowl, combine the dried chickpeas with the 2 tablespoons of Berbere Spice Blend, 1/2 teaspoon of Salt, and 2 tablespoons of Olive Oil. Toss everything together until the chickpeas are evenly coated.
  4. 4Spread the coated chickpeas in a single layer on a baking sheet. Bake for 20-25 minutes, or until they are crispy. Stir them halfway through the baking time.
  5. 5While the chickpeas are baking, heat a small skillet over medium heat. Add the 1/2 medium Onion (diced) and cook until softened, about 5-7 minutes. Add the 2 cloves Garlic (minced) and cook for 1 more minute until fragrant.
  6. 6Once the chickpeas are crispy and the onion and garlic are softened, remove the chickpeas from the oven. Add the cooked onion and garlic mixture to the bowl with the chickpeas. Add the 1 tablespoon of Lemon Juice and toss everything together to combine.
  7. 7Serve the Spiced Chickpea Bites warm.
