Ingredients

  • 2 cups All-purpose flour
  • 1/4 cup Canola oil
  • 1/2 cup Warm water
  • 1/2 teaspoon Salt
  • 1 can Chickpeas, cooked
  • 1 medium Potato, diced
  • 1 medium Carrot, diced
  • 1/2 cup Peas, frozen
  • 1/2 cup Onion, chopped
  • 1 teaspoon Ginger, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry powder
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1/4 teaspoon Turmeric

Instructions

  1. 1Prepare the dough: In a bowl, mix flour, canola oil, salt, and warm water. Knead until a smooth, elastic dough forms. Cover and let rest for 30 minutes.
  2. 2Prepare the filling: Heat a pan with a little canola oil. Add chopped onion, ginger, and garlic. Sauté until softened.
  3. 3Add diced potato, carrot, peas, and cooked chickpeas. Stir in curry powder, cumin, coriander, and turmeric. Cook until vegetables are tender.
  4. 4Divide the dough into small balls. Roll each ball into a thin circle. Cut the circle in half. Fold each half into a cone shape and seal the edges with water.
  5. 5Fill each cone with the chickpea and vegetable mixture. Seal the top edges with water.
  6. 6Preheat oven to 375°F (190°C).
  7. 7Place samosas on a baking sheet and bake for 30-35 minutes, or until golden brown.
