Ingredients

  • 1.5 lbs Chicken Breast
  • 1 cup Dried Apricots
  • 1 medium Onion
  • 2 cloves Garlic
  • 2 teaspoons Curry Powder
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Ground Coriander
  • 2 tablespoons Apple Cider Vinegar
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

  1. 1Cut the 1.5 lbs Chicken Breast into 1-inch cubes. Place wooden skewers in a bowl and cover with water. Let them soak for 30 minutes to prevent them from burning on the grill.
  2. 2Finely chop the 1 medium Onion and mince the 2 cloves Garlic. In a medium bowl, combine the chopped onion, minced garlic, 2 teaspoons Curry Powder, 1/2 teaspoon Turmeric, 1 teaspoon Ground Coriander, 2 tablespoons Apple Cider Vinegar, 2 tablespoons Olive Oil, 1/2 teaspoon Salt, and 1/4 teaspoon Pepper. Stir everything together until well combined.
  3. 3Add the 1.5 lbs Chicken Breast cubes and 1 cup Dried Apricots to the bowl with the marinade. Toss gently with your hands or a spoon until all the chicken and apricots are evenly coated. Cover the bowl and place it in the refrigerator to marinate for at least 30 minutes. For a deeper flavor, you can marinate it for up to overnight.
  4. 4Remove the wooden skewers from the water, letting any excess water drip off. Thread the marinated chicken cubes and dried apricots onto the skewers, alternating between them. Aim to place about 3-4 pieces of chicken and 2-3 apricots on each skewer.
  5. 5Preheat your grill to medium heat. If using a charcoal grill, this is about 350°F (175°C). If using a gas grill, set it to medium. Place the prepared skewers onto the preheated grill grates.
  6. 6Grill the skewers for 10 to 12 minutes. Turn them occasionally, about every 2-3 minutes, to ensure all sides cook evenly. The chicken is cooked through when it is no longer pink inside and reaches an internal temperature of 165°F (74°C). The apricots will become slightly softened and caramelized.
  7. 7Once cooked, carefully remove the skewers from the grill. Let them rest for 2-3 minutes before serving. This resting period allows the juices in the chicken to redistribute, making it more tender and moist.
