Spiced Carrot and Lentil Soup (Dairy & Nut-Free)

Ingredients

  • 1 cup, rinsed Red lentils
  • 2 medium, chopped Carrots
  • 1 medium, chopped Onion
  • 3 cloves, minced Garlic
  • 6 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Coriander
  • 1/4 teaspoon (optional) Chili flakes
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh cilantro

Instructions

  1. 1Heat olive oil in a large pot over medium heat. Add onion and carrots and cook until softened, about 5 minutes.
  2. 2Add garlic, cumin, turmeric, coriander, and chili flakes (if using). Cook for 1 minute more, stirring constantly.
  3. 3Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  4. 4Use an immersion blender to partially blend the soup to your desired consistency (or blend in batches in a regular blender).
  5. 5Stir in lemon juice, salt, and pepper.
  6. 6Garnish with fresh cilantro before serving.
