Spiced Carrot and Coconut Soup Shooters

Ingredients

  • 1 pound Carrots
  • 1/2 medium Onion
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 1 can Coconut milk
  • 2 cups Vegetable broth
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Coriander
  • 1/4 teaspoon Turmeric
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Heat oil in a pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. 2Add garlic and ginger and cook for another minute.
  3. 3Add carrots, cumin, coriander, and turmeric. Cook for 5 minutes.
  4. 4Pour in coconut milk and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until carrots are tender.
  5. 5Puree the soup with an immersion blender or in a regular blender until smooth.
  6. 6Season with salt and pepper to taste.
  7. 7Serve warm in small shooter glasses.
