Ingredients

  • 1 lb Beef sirloin
  • 1 large Red bell pepper
  • 1 medium Zucchini
  • 1 medium Red onion
  • 0.25 cup Soy sauce
  • 2 tablespoons Sesame oil
  • 2 cloves Garlic
  • 1 teaspoon Ginger
  • 0.25 cup Sunflower seed butter
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey
  • 0.25 teaspoon Chili flakes
  • 8 Skewers

Instructions

  1. 1Cut the 1 lb Beef sirloin into 1-inch cubes. In a bowl, combine the 0.25 cup Soy sauce, 2 tablespoons Sesame oil, 2 cloves Garlic (minced), and 1 teaspoon Ginger (grated). Add the beef cubes to the bowl and toss to coat. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
  2. 2While the beef is marinating, prepare the peanut-free satay sauce. In a separate bowl, whisk together the 0.25 cup Sunflower seed butter, 2 tablespoons Lime juice, 1 tablespoon Honey, and 0.25 teaspoon Chili flakes (if using). Set aside.
  3. 3Cut the 1 large Red bell pepper into 1-inch pieces. Cut the 1 medium Zucchini into 1-inch thick rounds. Cut the 1 medium Red onion into 1-inch wedges. Thread the marinated beef cubes, red bell pepper pieces, zucchini rounds, and red onion wedges alternately onto the 8 Skewers.
  4. 4Preheat your grill to medium-high heat, which is approximately 400-450°F (200-230°C).
  5. 5Place the assembled skewers on the preheated grill. Grill for 8 to 10 minutes, turning the skewers occasionally. The beef should reach an internal temperature of 145°F (63°C) for medium-rare, or cook longer to your desired doneness. The vegetables should be tender and slightly charred.
  6. 6Remove the skewers from the grill and let them rest for 2-3 minutes before serving. Serve the grilled skewers with the prepared peanut-free satay sauce on the side for dipping.
