Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 large Orange
  • 0.25 medium Red onion
  • 0.5 cup Kalamata olives
  • 1 cup Roasted red peppers
  • 0.25 cup Fresh parsley
  • 3 tbsp Olive oil
  • 2 tbsp Orange juice
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1Rinse the quinoa in a fine-mesh sieve.
  2. 2Combine quinoa and water in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is cooked through and water is absorbed. Fluff with a fork and let cool.
  3. 3In a large bowl, combine the cooked quinoa, orange segments, red onion, Kalamata olives, roasted red peppers, and parsley.
  4. 4In a small bowl, whisk together olive oil, orange juice, lemon juice, salt, and pepper.
  5. 5Pour the vinaigrette over the quinoa salad and toss to combine. Serve chilled or at room temperature.
