Spanish Garlic Soup (Sopa de Ajo)

Ingredients

  • 1/4 cup Olive oil
  • 8 cloves Garlic
  • 4 slices Day-old bread (crusty)
  • 1 tsp Smoked paprika
  • 6 cups Chicken or vegetable broth
  • 1 Bay leaf
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 4 Eggs
  • 1 tbsp Sherry vinegar

Instructions

  1. 1Slice the garlic cloves thinly. Cut the bread into small cubes.
  2. 2Heat olive oil in a large pot over medium heat. Add garlic and cook until fragrant and lightly golden, about 2-3 minutes. Be careful not to burn the garlic.
  3. 3Stir in the bread cubes and smoked paprika and cook for 2-3 minutes, until the bread is toasted.
  4. 4Pour in the chicken or vegetable broth and add the bay leaf. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  5. 5Season with salt and pepper to taste. Stir in the sherry vinegar.
  6. 6Crack an egg into each serving bowl. Ladle the hot soup over the eggs, allowing them to cook slightly in the hot broth. Serve immediately.
