Spanish Garlic Shrimp (Gambas al Ajillo)

A classic Spanish tapa, these garlic shrimp are quick, flavorful, and naturally egg-free. Perfect as an appetizer or light dinner.

Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1/4 cup Olive oil
  • 6 cloves Garlic
  • 1/4 teaspoon Red pepper flakes
  • 1/4 cup Dry sherry
  • 2 tablespoons Fresh parsley
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. 1Place a 10-inch skillet over medium heat, which is 350°F (177°C). Add the 1/4 cup of olive oil to the skillet.
  2. 2Add the 6 cloves of garlic, which should be thinly sliced, and the 1/4 teaspoon of red pepper flakes to the skillet. Cook, stirring constantly, until the garlic is fragrant and just beginning to turn golden, about 1 minute. Do not let the garlic burn.
  3. 3Add the 1 lb of shrimp to the skillet in a single layer. Cook for 1.5 to 2.5 minutes per side, until the shrimp turn pink and opaque and reach an internal temperature of 145°F (63°C).
  4. 4Carefully pour in the 1/4 cup of dry sherry. Let it bubble and cook for 1 minute, allowing some of the alcohol to evaporate.
  5. 5Remove the skillet from the heat. Stir in the 2 tablespoons of fresh parsley, the 1/2 teaspoon of salt, and the 1/4 teaspoon of black pepper.
  6. 6Serve the Spanish Garlic Shrimp immediately directly from the skillet.
