Ingredients

  • 30 oz Frozen Spinach
  • 8 oz Feta Cheese
  • 1 medium Onion
  • 1/4 cup Fresh Dill
  • 1/4 cup Fresh Mint
  • 1/2 cup Applesauce
  • 1/2 cup Olive Oil
  • 1 package Phyllo Dough

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Thaw the spinach and squeeze out excess water. Finely chop the onion, dill, and mint.
  3. 3In a large bowl, combine the spinach, feta cheese, onion, dill, mint, and applesauce. Mix well.
  4. 4Brush a baking sheet with olive oil.
  5. 5Lay one sheet of phyllo dough on the baking sheet and brush with olive oil. Repeat with 5 more layers of phyllo dough.
  6. 6Spread the spinach mixture evenly over the phyllo dough.
  7. 7Lay another sheet of phyllo dough over the spinach mixture and brush with olive oil. Repeat with 5 more layers of phyllo dough.
  8. 8Using a sharp knife, cut the spanakopita into triangles.
  9. 9Bake for 30-35 minutes, or until golden brown.
  10. 10Let cool slightly before serving.
