Spam Musubi with Coconut Rice (Gluten-Free)

Ingredients

  • 1 can Spam
  • 3 cups Sushi Rice
  • 1 can Coconut Milk
  • 1 cup Water
  • 1 tbsp Coconut Sugar
  • 2 tbsp Rice Vinegar
  • 6 sheets Nori Seaweed Sheets
  • To Taste Soy Sauce (Tamari)

Instructions

  1. 1Cut the 1 can of Spam into 6 slices, each about 1/4-inch thick. Heat a 10-inch non-stick skillet over medium heat (around 300-325°F / 150-160°C). Add the Spam slices to the hot skillet and fry for 2-3 minutes per side, until they are golden brown and slightly crispy. Remove the fried Spam slices from the pan and set them aside.
  2. 2Rinse the 3 cups of Sushi Rice under cold running water in a fine-mesh sieve until the water runs completely clear. In a large heavy-bottomed pot (such as a 4-quart saucepan) with a tight-fitting lid, combine the rinsed 3 cups of Sushi Rice, the 1 can of Coconut Milk, the 1 cup of Water, and the 1 tbsp of Coconut Sugar.
  3. 3Bring the rice mixture to a boil over medium-high heat (around 375-400°F / 190-205°C). Immediately reduce the heat to low, cover the pot tightly with its lid, and simmer for 18-20 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the lid during this cooking process.
  4. 4Remove the pot from the heat and let the rice rest, still covered, for 10 minutes; this allows the steam to finish cooking the rice evenly. After resting, gently fold the 2 tbsp of Rice Vinegar into the cooked rice with a spatula, being careful not to mash the grains.
  5. 5Lay one of the 6 sheets of Nori Seaweed Sheets flat on a clean, dry surface. Take about 1/2 cup of the seasoned coconut rice and, using a musubi press or your slightly wet hands, press it firmly into a compact rectangular block, roughly 3.5 inches long by 2 inches wide, in the center of the nori sheet.
  6. 6Place one of the fried Spam slices directly on top of the pressed rice block. Fold one end of the nori sheet over the Spam and rice, then fold the other end over, overlapping slightly. Lightly moisten the overlapping edge of the nori with a tiny bit of water to seal it securely. Repeat this process for the remaining 5 sheets of nori, rice, and Spam slices.
  7. 7Serve the Spam Musubi immediately, offering the To Taste Soy Sauce (Tamari) on the side for dipping.
