Ingredients

  • 4 cups Cooked sushi rice
  • 1 can Spam
  • 2 tbsp Soy sauce (low sodium)
  • 1 tbsp Sugar
  • 6 sheets Nori seaweed

Instructions

  1. 1Open the can of Spam and cut it into 6 slices, each 1/4-inch thick.
  2. 2In a small bowl, whisk together the 2 tablespoons of low sodium soy sauce and the 1 tablespoon of sugar until the sugar is dissolved.
  3. 3Place the 6 slices of Spam in the soy sauce mixture and let them marinate for 5 minutes.
  4. 4Heat a large skillet over medium-high heat. Add the marinated Spam slices and cook for 2-3 minutes per side, until they are nicely browned and slightly caramelized. Remove the Spam from the skillet and set aside.
  5. 5Place one sheet of nori seaweed on a clean, dry surface with the shiny side down. Place a musubi mold in the center of the nori sheet.
  6. 6Fill the musubi mold with 2/3 cup of the 4 cups of cooked sushi rice, pressing it down firmly to create a compact layer. Place one slice of the cooked Spam on top of the rice.
  7. 7Carefully lift the musubi mold straight up to release the rice and Spam onto the nori sheet. Gently fold the nori sheet around the rice and Spam, pressing lightly to seal the edge. You can moisten the edge of the nori with a tiny bit of water if needed to help it stick.
  8. 8Repeat steps 5 through 7 with the remaining 5 sheets of nori, the remaining cooked sushi rice, and the remaining Spam slices to make 6 Spam musubi in total.
