Soy-Free Pineapple Fried Rice with Ham

Ingredients

  • 4 cups Cooked Rice (day-old)
  • 1 cup Diced Ham
  • 1 cup Diced Pineapple
  • 1 cup Mixed Vegetables (peas, carrots, corn)
  • 2 large Eggs
  • 3 tbsp Coconut Aminos
  • 2 cloves Garlic
  • 2 Green Onions
  • 1 tbsp Sesame Oil
  • 1 tbsp Vegetable Oil

Instructions

  1. 1Heat vegetable oil in a large skillet or wok over medium-high heat. Add diced ham and cook until lightly browned.
  2. 2Add mixed vegetables and garlic and cook until slightly softened.
  3. 3Push the ingredients to one side of the skillet. Crack eggs into the empty space and scramble until cooked.
  4. 4Add cooked rice and diced pineapple to the skillet. Stir to combine all ingredients.
  5. 5Drizzle with coconut aminos and sesame oil. Stir-fry for 5-7 minutes, or until heated through and slightly crispy.
  6. 6Garnish with chopped green onions before serving.
