Soy-Free Irish Soda Bread with Apple Butter

Ingredients

  • 4 cups Gluten-Free All-Purpose Flour (soy-free)
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 cup Dairy-Free Butter (cold, cubed)
  • 1 1/2 cups Dairy-Free Milk
  • 1 cup Apple Butter
  • 4 Apples
  • 1 tsp Cinnamon
  • 1/4 cup Brown Sugar

Instructions

  1. 1Peel, core, and chop the 4 apples into 1/2-inch pieces. In a medium saucepan, combine the chopped 4 apples, 1 tsp cinnamon, and 1/4 cup brown sugar. Simmer over medium heat for 15-20 minutes, stirring occasionally, until the apples are very soft and the mixture has thickened. Carefully transfer the apple mixture to a blender and blend until smooth, then set aside the 1 cup of apple butter to cool.
  2. 2Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lining it with parchment paper, or leave it unlined.
  3. 3In a large mixing bowl, whisk together the 4 cups of Gluten-Free All-Purpose Flour, 1 tsp Baking Soda, and 1 tsp Salt until they are thoroughly combined.
  4. 4Add the 1/2 cup of cold, cubed Dairy-Free Butter to the dry ingredients. Use a pastry blender, two knives, or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
  5. 5Pour in the 1 1/2 cups of Dairy-Free Milk. Stir gently with a spoon or spatula until the ingredients are just combined and a shaggy dough forms, being careful not to overmix.
  6. 6Gently gather the dough and shape it into a round loaf, about 7-8 inches in diameter. Place the loaf onto the prepared baking sheet. Using a sharp knife, cut a shallow cross about 1/2-inch deep into the top of the bread.
  7. 7Bake the bread in the preheated oven for 35-40 minutes. The bread is done when the crust is golden brown and firm to the touch, and a toothpick inserted into the center of the loaf comes out clean.
  8. 8Carefully remove the bread from the oven and transfer it to a wire rack to cool for at least 10 minutes. Serve the warm Irish Soda Bread with the prepared 1 cup of Apple Butter.
