South African Pap with Chakalaka and Fried Eggs

Ingredients

  • 1 cup Maize Meal (Polenta)
  • 3 cups Water
  • 1/2 teaspoon Salt
  • 1 can Chakalaka (store-bought)
  • 4 large Eggs
  • 2 tablespoons Olive Oil

Instructions

  1. 1In a large heavy-bottomed pot, combine the 3 cups of Water and the 1/2 teaspoon of Salt. Bring this mixture to a rolling boil over high heat, about 5-7 minutes.
  2. 2Gradually whisk the 1 cup of Maize Meal into the boiling water. Stir constantly as you add it to prevent any lumps from forming. Once all the maize meal is incorporated, reduce the heat to low.
  3. 3Cover the pot and let the pap simmer gently for 15-20 minutes. Stir it occasionally to ensure it doesn't stick to the bottom and to maintain a creamy texture. The pap is ready when it is thick and pulls away from the sides of the pot.
  4. 4While the pap is simmering, heat the 2 tablespoons of Olive Oil in a non-stick skillet over medium heat (350°F / 175°C).
  5. 5Carefully crack the 4 large Eggs into the hot oil. Fry the eggs for 2-4 minutes, or until the whites are set and the yolks are cooked to your preference (runny or firm).
  6. 6Spoon the cooked pap into four individual bowls. Open the can of Chakalaka and spoon a generous amount over the pap in each bowl. Top each serving with one of the fried eggs.
