South African Biltong (Gluten-Free)

Ingredients

  • 2 lb Beef (Silverside or Top Round)
  • 2 tbsp Tapioca Flour
  • 1/4 cup Sea Salt
  • 2 tbsp Coriander Seeds
  • 1 tbsp Black Peppercorns
  • 1 tbsp Brown Sugar
  • 1 tsp Baking Soda
  • 1/2 cup Apple Cider Vinegar

Instructions

  1. 1Cut the beef into strips, about 1 inch thick.
  2. 2In a dry pan, lightly toast coriander seeds and peppercorns. Grind coarsely.
  3. 3Combine tapioca flour, salt, coriander, pepper, brown sugar, and baking soda in a bowl.
  4. 4Rub the spice mixture all over the beef strips.
  5. 5Place the beef strips in a container and pour apple cider vinegar over them. Marinate in the refrigerator for 4 hours.
  6. 6Hang the beef strips in a biltong box or dehydrator at low temperature (around 70-80°F or 21-27°C) for 48-72 hours, or until dried to your liking.
