South African Biltong (Air-Dried Beef)

A flavorful air-dried beef snack, similar to jerky, popular in South Africa. Prepared with safe spices and without any nut-based ingredients.

Ingredients

  • 2 lbs Beef (Silverside or Topside)
  • 2 tbsp Coriander Seeds
  • 1 tbsp Black Peppercorns
  • 2 tbsp Sea Salt
  • 1 tbsp Brown Sugar
  • 1 tsp Baking Soda
  • 1/2 cup Apple Cider Vinegar
  • 1/4 cup Worcestershire Sauce

Instructions

  1. 1Combine crushed coriander seeds, black peppercorns, sea salt, brown sugar, and baking soda in a bowl.
  2. 2Rub the spice mixture all over the beef strips.
  3. 3Place the spiced beef strips in a container. Pour apple cider vinegar and Worcestershire sauce over them. Marinate in the refrigerator for 12-24 hours.
  4. 4Remove the beef strips from the marinade and pat dry.
  5. 5Hang the beef strips in a cool, dry, well-ventilated area or a dehydrator for 3-5 days, or until dried to your liking.
