Ingredients

  • 2 lbs Beef (Silverside or Topside)
  • 1/2 cup Coarse Salt
  • 2 tablespoons Black Pepper
  • 2 tablespoons Coriander Seeds (crushed)
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Baking Soda
  • 1/2 cup Vinegar (Brown or Apple Cider)
  • 2 tablespoons Worcestershire Sauce

Instructions

  1. 1Cut the beef into 1-inch thick strips, along the grain.
  2. 2In a bowl, mix together the salt, pepper, coriander seeds, brown sugar, and baking soda.
  3. 3Rub the spice mixture all over the beef strips, ensuring they are fully coated.
  4. 4Place the beef strips in a non-reactive container or ziplock bag.
  5. 5Pour the vinegar and Worcestershire sauce over the beef strips.
  6. 6Marinate in the refrigerator for 12-24 hours, turning occasionally.
  7. 7Remove the beef strips from the marinade and pat them dry with paper towels.
  8. 8Hang the beef strips in a well-ventilated area (or use a biltong box) for 3-7 days, or until dried to your desired consistency.
  9. 9Once dried, slice the biltong thinly and serve.
