Ingredients

  • 2 cups All-purpose flour
  • 1 cup Cooked pumpkin puree
  • 2 tablespoons Shortening
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Warm water
  • 2 cups Vegetable oil
  • 1 cup Chancaca (or dark brown sugar)
  • 1 cup Water
  • 1 Orange peel
  • 1 Cinnamon stick
  • 2 Star anise
  • 0.5 cup Plant-based milk (e.g., almond, soy)

Instructions

  1. 1In a large bowl, combine the 2 cups of all-purpose flour, 1 cup of cooked pumpkin puree, 2 tablespoons of shortening, 1 teaspoon of baking powder, and 0.5 teaspoon of salt.
  2. 2Gradually add the 0.75 cup of warm water while mixing until a soft dough forms. Turn the dough out onto a clean surface and knead for 5 minutes until smooth and elastic.
  3. 3On a lightly floured surface, roll the dough out to about 1/4 inch thickness. Use a round or square cutter to cut the dough into individual sopaipillas.
  4. 4Pour the 2 cups of vegetable oil into a large, heavy-bottomed pan. Heat the oil over medium heat until it reaches 350°F (175°C).
  5. 5Carefully place the cut sopaipillas into the hot oil, frying them in batches if necessary to avoid overcrowding the pan. Fry for 2-3 minutes per side, or until they are puffed up and golden brown. Use a slotted spoon to remove the fried sopaipillas and place them on a plate lined with paper towels to drain.
  6. 6While the sopaipillas are frying, combine the 1 cup of chancaca (or dark brown sugar), 1 cup of water, the orange peel, 1 cinnamon stick, and 2 star anise in a separate medium saucepan. Bring this mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 15 minutes, or until the chancaca has dissolved and the syrup has thickened slightly.
  7. 7Remove and discard the orange peel, cinnamon stick, and star anise from the syrup. Stir in the 0.5 cup of plant-based milk.
  8. 8Working quickly, dip the fried sopaipillas one at a time into the warm syrup, ensuring they are fully coated. Arrange the soaked sopaipillas on a serving platter and serve immediately while warm.
