Ingredients

  • 2 cups Cooked pumpkin puree
  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 medium Mashed ripe banana
  • 2 cups Vegetable oil
  • 1 cup Water
  • 8 oz Chancaca (piloncillo)
  • 1 strip Orange peel
  • 1 small Cinnamon stick

Instructions

  1. 1In a large bowl, combine the 2 cups of cooked pumpkin puree, 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 0.5 medium mashed ripe banana. Mix with a spoon or your hands until everything is combined and a soft dough forms. Gently knead the dough in the bowl for about 1 minute until it is smooth.
  2. 2On a clean surface, roll out the dough to about 1/4 inch thickness. Use a round or square cutter to cut the dough into shapes. You should have several pieces.
  3. 3Pour the 2 cups of vegetable oil into a large skillet. Heat the oil over medium heat until it reaches 350°F (175°C). The oil is ready when a tiny piece of dough sizzles immediately when dropped in.
  4. 4Carefully place a few of the cut dough shapes into the hot oil. Fry for 2-3 minutes per side, or until they are golden brown and puffed up. Use a slotted spoon to remove the fried sopaipillas from the oil and place them on a plate lined with paper towels to drain.
  5. 5While the sopaipillas are frying, prepare the syrup. In a medium saucepan, combine the 1 cup of water, 8 oz of chancaca (piloncillo), 1 strip of orange peel, and 1 small cinnamon stick. Heat over medium-high heat, stirring until the chancaca is completely dissolved.
  6. 6Bring the syrup mixture to a boil, then reduce the heat to low and let it simmer for 5-10 minutes. The syrup should thicken slightly. Remove and discard the orange peel and cinnamon stick.
  7. 7Gently place the fried sopaipillas into the warm syrup. Let them soak for 2-3 minutes, turning them once to ensure they absorb the syrup on both sides. They should become soft and slightly puffed.
  8. 8Using a slotted spoon, remove the soaked sopaipillas from the syrup and arrange them on a serving plate. Serve the sopaipillas pasadas warm.
