Sombi (Sweet Rice Pudding)

A creamy and comforting Senegalese rice pudding. Made with rice, milk, vanilla, and nutmeg, it’s a simple, SHELLFISH-free dessert snack.

Ingredients

  • 1/2 cup Rice
  • 4 cups Milk
  • 1/2 cup Sugar
  • 1 tsp Vanilla extract
  • 1/4 tsp Nutmeg

Instructions

  1. 1Measure the 1/2 cup of Rice into a fine-mesh sieve and rinse it under cool running water until the water runs clear.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1/2 cup of Rice and the 4 cups of Milk. Place the pot over medium heat and bring the mixture to a gentle boil, about 5-7 minutes. Once boiling, immediately reduce the heat to low.
  3. 3Cover the pot and let the mixture simmer for 40-45 minutes, stirring every 5-10 minutes to prevent sticking. The rice should be very soft and the pudding should have thickened considerably. You will notice it has a creamy, porridge-like consistency.
  4. 4Uncover the pot and stir in the 1/2 cup of Sugar, 1 teaspoon of Vanilla extract, and 1/4 teaspoon of Nutmeg. Continue to cook over low heat, stirring constantly, for an additional 5 minutes until the sugar is fully dissolved and the pudding is smooth.
  5. 5Remove the pot from the heat. Serve the Sombi warm, or transfer it to a container, cover, and chill in the refrigerator for at least 2 hours before serving cold.
