Ingredients

  • 1 cup Chickpea Flour
  • 1 cup Water
  • 1/4 cup Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Fresh Rosemary

Instructions

  1. 1Preheat your oven to 450°F (232°C). Place a cast iron skillet, such as a 10-inch or 12-inch skillet, inside the oven while it preheats.
  2. 2In a medium bowl, whisk together the 1 cup of chickpea flour, 1 cup of water, 1/4 cup of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the mixture is completely smooth and free of any lumps.
  3. 3Using oven mitts for safety, carefully remove the hot cast iron skillet from the preheated oven. Immediately pour the prepared batter from the bowl into the hot skillet, allowing it to spread out evenly across the bottom.
  4. 4Sprinkle the 1 teaspoon of fresh rosemary evenly over the top of the batter in the skillet.
  5. 5Carefully place the skillet back into the 450°F (232°C) oven and bake for 15 to 20 minutes. The socca is done when it appears golden brown and its edges look slightly crispy.
  6. 6Carefully remove the skillet from the oven. Let the socca cool in the skillet for 1 to 2 minutes before proceeding to cut it.
  7. 7Cut the socca into wedges directly in the skillet and serve immediately.
